Whether it's dinner or a snack these Stir Fried Caramelized Veggie Noodles get the job done
1 tbsp Coconut Oil
2 tsp Ginger, shredded
2 Cloves Garlic, diced
½ Red Bell Pepper, chopped
½ Green Bell Pepper, chopped
1 Small Red Onion, chopped
1 cup Pea Pods, halved
1 cup Carrots, sliced
2 cups Broccoli Crowns
2 14oz Udon Noodle packets
2 tbsp GravyMaster®
2 tbsp Rice Wine Vinegar
2 tsp Sesame Oil
1 tsp Himalayan Salt
1 tsp Black Pepper
¼ tsp Miso Sauce (optional)
1 tsp Sriracha Sauce (optional)
½ cup Water
1 tbsp Sesame Seeds
½ cup Green Onions, chopped, for garnish
Step 1: In a stir-fry pan, add the coconut oil and heat on medium for 30 seconds.
Step 2: Add the ginger, garlic, and bell peppers. Cook until soft (about 5 minutes).
Step 3: Add broccoli and cook until soft (about 5 minutes).
Step 4: Add the udon noodles, and 1/4 cup of water. Let it sit for about a minute before stirring it.
Step 5: Add the remaining ingredients, except the sesame seeds and green onions.
Step 6: Cook for another 5 minutes and then turn off the heat. Leave noodles in the pan for a few minutes.
Add the sesame seeds and green onions for garnish.
